HEALTHIER DESSERTS EPISODE #1: Paleo Lemon Loaf✨
Okay, I'm not sure if this is technically a dessert or a breakfast item? idk, but for the purpose of this series we're going to go with dessert! This series will be all about simple ways to "healthify" some of your favorite deserts 😋 Its no secret I have a sweet tooth so adding this series into the mix felt like a no brainer! #kitk

you'll need:
2 ripe bananas (mashed)
1/4 cup coconut oil
1/4 cup maple syrup
3 eggs
1 lemon juiced
zest from one lemon (plus more for topping)
2 tsp vanilla
2 cups + 3 tbs @bobsredmill almond flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp sat
frosting:
@birchbenders vanilla keto frosting (or frosting of choice)
lemon juice
Preheat oven to 350 F.
Mix wet ingredients and dry ingredients together in separate bowls.
Then add dry in gradients to wet ingredients and mix well.
Line 9x5 baking sheet with parchment paper and pour batter into pan. Batter will be thick... that's what you want!
Bake for 25 minutes uncovered.
Remove from oven, cover baking pan in foil and bake for an additional 25-30 minutes, or until toothpick comes out clean.
Mix frosting and lemon juice together and frost when loaf has completely cooled.
Top with lemon zest and enjoy!
