SHEET PAN MEALS EPISODE #2: Maple Walnut Chicken & Veggies✨
this is the perfect comforting winter weeknight dinner you can whip up in just about 35 minutes that is oh so healthy & satisfying #kitk

you'll need:
1-2 sweet potatoes diced
3 cups brussels sprouts halved
1-2 honeycrisp apples diced
4 chicken breasts (mine were large so I could only fit 3 on the sheet pan 🙃)
olive oil
@lawrysseasoning garlic salt
walnut topping:
1/4 cup chopped walnuts
2 tbs dijon
3 tbs maple syrup
1 tbs olive oil
1/2 tsp paprika
salt + pepper to taste
Preheat oven to 400 F
Chop sweet potatoes, brussels, and apples, toss with olive oil and garlic salt
Toss on sheet pan and bake in oven for 15 minutes while preparing chicken + walnut topping
Season chicken breasts generously with salt and pepper and set aside
Mix walnut topping ingredients in bowl until well combined and spread topping over chicken breasts
After 15 minutes in the oven, toss veggies, and move them to the side making room for chicken breasts in the center of the sheet pan
Place chicken breasts on sheet pan and return to oven for 20 minutes or until chicken reaches an internal temperature of 165 F
Let cool & enjoy!
